Ingredients

For the Dough:

  • 3/4 cup warm milk
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/3 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/3 cup unsalted butter, melted but not hot
  • 4 cups all-purpose flour
  • 1 tsp salt

For the Filling:

  • 1/3 cup unsalted butter, very soft (room temperature)
  • 1 cup brown sugar (packed)
  • 2 1/2 tbsp ground cinnamon

For the Cream Cheese Glaze:

  • 4 oz (115g) cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Make the Dough

  1. Activate Yeast: In a large bowl, combine the warm milk, a pinch of the sugar, and the yeast. Let it sit for 5–10 minutes until it becomes frothy.
  2. Mix: Add the remaining sugar, eggs, melted butter, and salt. Stir in the flour one cup at a time until a soft dough forms.
  3. Knead & Rise: Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp towel, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.

2. Assemble the Rolls

  1. Roll Out: Punch down the dough and roll it out on a floured surface into a large rectangle (about 12×18 inches / 30×45 cm).
  2. Fill: Spread the softened butter evenly over the dough. In a small bowl, mix the brown sugar and cinnamon, then sprinkle it generously over the butter.
  3. Cut: Roll the dough up tightly starting from the long edge to form a log. Cut into 12 equal slices using a sharp knife or unflavored dental floss.
  4. Second Rise: Place the rolls in a greased 9×13 inch baking pan. Cover and let rise again for 30–45 minutes.

3. Bake and Glaze

  1. Preheat your oven to 175°C (350°F).
  2. Bake the rolls for 20–25 minutes until they are lightly golden brown on top.
  3. Make Glaze: While baking, beat the cream cheese, butter, powdered sugar, and vanilla together until smooth. Spread the glaze over the cinnamon rolls while they are still warm.
